Syncing

This is something I've been thinking about for some but now ive got my iPhone and iPad I want to consider syncing them all. The main thing is my email. Currently standard iPhone or iPad syncing for mail is terrible, it has no spam filter at all so all I see is spam and in between my emails. On my mac this is not a problem.
If I sync my mail through google can I send an email and have the mail still come from my own email address? Is mobileme a good idea does that allow me to use my own email address?
Love to hear your thoughts and ideas of what I can or cannot do.
Cheers

On gmail if you use it to collect emails from pop3 you can send email from those email addresses
MobileMe - nope, you can use a domain on the hosting that comes with it but no email on that domain

I use rackspace for hosted exchange and also iPhone syncing. Don't know what the price is to be honest, but it works well.
