How do I make the categories div expand with the inserted catergories? They all seem to flow out of the box!

Try removing the height:300px from #catblock; firstly. You then need to find a way to make the container background image expand. There are things out there to do it dynamically such as nifty corners, otherwise, a top and tail div with the top and bottom background image would do it.
